Celery Root

Celery root, also called celeriac is one of those vegetables you might have to go to a large or specialty grocery store to find, but the flavor you can create cooking with it is well worth the hunt.

This vegetable looks similar to a turnip with green celery like stems sprouting out the top that are not edible.  To cook with celery root you must first peel off the rough exterior and discard the greenery on top.

Celery root can be used in any recipe in place of celery.  It is best utilized in roasting, soups or sliced thinly on a salad.  This recipe for celery root and mushroom soup looks delicious for a cold winters day.

Next time you are out shopping and stumble upon this strange looking vegetable think about giving it a try.
